Biscuits go grain-free

Making the switch this new year to more whole foods? Even if that means you’re eating whole grains still, these delicious morsels will satisfy without loading you up on refined flours or chemically processed fats. They’re like, you know, a “healthy” biscuit. No, I didn’t say low-calorie but who cares about that anyway? Eat good food, with healthy portions, feel full and satisfied. The end.


These babies are fluffy, savory, a little sweet, crumbly- perfect for a drizzle of honey or the addition of herbs or spices. I make these to go along warming pots of soup or for those mornings when all I really want is bread.

After a variety of blood panels and more the past year, we discovered much of my joint inflammation issues were stemming from grains. Not gluten, folks. All grains. Which makes me sad. But also, kinda infuriated.

Even if you’re all good with grains, these drop biscuits come together in about 3 minutes, no kneading, no cutting. Just mix together, plop on a baking sheet and bake for 15 minutes. Done.

Plus these are a great base to add any additional flavors too! I added some dried sage to these, but chives and garlic or cinnamon would be fantastic swirled throughout.

RECIPE:

2.5 cups of finely ground almond flour, preferably unbleached

1/4 cup pure maple syrup or raw honey (honey will make them sweeter)

1/4 virgin coconut oil (or sub any mild, heart healthy oil)

2 large eggs

1/2 tsp baking soda

1 tsp apple cider vinegar

opt: 1/4 tsp sea salt

Optional Additions:

VEGAN OPTION: sub 2 Tablespoons finely ground Flax Seed + 6 Tablespoons water for eggs. (Combine flax and water, let sit until thickened)

2 tsp dried sage, 1 tsp dried thyme

1 tsp ground cinnamon + 2 tablespoons chopped raisins

reduce maple syrup to 1 Tablespoon, increase salt to 1/2 tsp + 2 cloves pressed garlic and 2 tablespoons minced chives

Preheat oven to 400. Mix all ingredients together until well combined. Drop with an ice cream scoop onto a parchment lined baking sheet. Bake in preheated oven for 13-15 minutes. Enjoy! Serves 6, 4″ biscuits.
