This is one of the easiest and quickest breakfast pastries yet elegant and elevated The dough comes together in just a few minutes and with a simple wedge cut, no rolling or special cutters are needed
Preheat the oven to 400 but only while the dough is chilling and you’ll be set for the perfect scone. This is based on the Plain Scone recipe over at The First Year Blog – it was the best and most simple recipe I’ve found! – but tailored to a GF/DF lifestyle.
Lemon Lavender Scones
- 2 1/14 cups King Arthur Measure-for-measure gluten free flour blend
- 1/2 cup maple or coconut sugar (or cane, if you like)
- 1 tablespoon baking powder
- 1/2 tsp salt
- 1/2 cup coconut oil
- 1/4 cup dairy free yogurt + 1/4 cup water, mixed
- 1 large tsp vanilla bean paste
- Zest of 1-2 lemons (your preference on amount, I like more)
- 1-2 tsp dried, organic, lavender buds
Lemon Vanilla Drizzle
- 2 cups powdered sugar
- Juice of 1 large lemon
- 1 teaspoon vanilla paste
Combine flour, sugar, coconut oil, baking powder and salt; mix with a fork and then gently with your hands until a crumbly texture forms and you can press it into a soft ball. Add lemon zest, egg, yogurt/water mix, vanilla bean paste, and lavender buds. Mix gently until just formed. As there is no gluten, it’s difficult to “over-mix” this dough but you still want to take a gentle approach, keeping the dough as light and non-compacted as possible. Turn crumbly dough onto a large piece of parchment paper (one that you’ll bake the scones on) and gently form into a flat disk, about 1 1/2 -2 inches thick.
Let dough chill for 30 minutes. Preheat your oven to 400 during the last 10 minutes of the chill.
Using a sharp knife, cut the chilled disc into equal wedges and separate onto the parchment lined baking sheet. Bake immediately for 30-35 minutes until fluffy and golden brown.
Let cool completely. Top with Lemon Vanilla Drizzle, additional lavender buds and rings of lemon zest. Eat within 2 days.
If you’re not a lavender fan, omit or exchange for organic dried rose petals, mini allergen friendly chocolate chips, orange zest, or even other sweet herbs like basil.
