5 Minute Gluten Free Pumpkin Spice Pancakes w/ Elderberry Honey

We love Aldi in this house. It’s literally the best grocery store. Once of my favorite things is the fact that they carry an entire line of gluten free products. From pastas to breads to baking mixes and more, gluten free. It’s awesome. Granted, it’s not paleo, not grain free but in moderation I can handle gluten free. It’s alllll about the moderation, folks.

This morning I wanted pancakes. I – obviously- don’t eat breakfasts like that often but today it was happening. I labeled up a mug of Earl Grey Coconut Chai and set to work. And by work, I mean I opened a box and two cans.

These pancakes turned out soooooo good! Super thick and fluffy with just the right amount of pumpkin and spice. And, of course, the Elderberry Honey drizzle from yours truly made it divine. I mixed these up in literally 5 minutes and they were ready to eat in 10. So perfect for a crisp fall morning. We are a multi-sport, multi-athlete household and if you’re searching for a great pre-race/pre-meet/pre-game breakfast- this is it. Low sugar, great simple carbs and a booster of immunity.

Recipe

  • 1 cup Aldi Live G Free pancake and baking mix
  • 1/4 cup Aldi Baker’s Corner pure canned pumpkin
  • 1 egg
  • 3 tsp ground Pumpkin Spice
  • 1 tsp ground cinnamon
  • 1 cup canned coconut milk (or milk of your preference)

Elderberry Honey

Mix honey and elderberry syrup together and set aside. Mix pancake ingredients together in a medium sized bowl and stir until combined and no lumps are showing. Scoop onto greased pan in large spoonfuls and flatten slightly with back of spoon. Cook approximately 3 minutes per side or until cooked in center. Remove from pan, drizzle with elderberry honey, fresh berries and serve immediately. Can also be frozen and reheated at a later date.
